Lemon Mustard Chicken Salad

Lemon Mustard Dressing (included)make ahead of time
4c shredded lettuce
2c shredded cooked chicken breast, chilled
1/4c chopped tomatoes
1 hard boiled egg, sliced
2 md green onions, sliced thinly
1/4c shredded parmesan cheese

Prepare dressing, chill.

Arrange lettuce, chicken, tomatoes, egg and cheese on plates. Spoon dressing over the top. Sprinkle with onions.

Serve. Makes for a wonderful light, cool summer meal.

Dressing:
1/4 c mayonnaise
1/4 c lemon juice
2T yellow mustard
1 clove garlic, minced
